"We have time for everything:
to sleep, to run from one place to another,
to regret having mistaken and to mistake again,
to judge the others and to forgive
ourselves,
we have time for reading and writing,
for making corrections to our texts, to regret ever having
written,
we have time to make projects and never
respect them,
we have time to make illusions and gamble
through their ashes later on.
We have time for ambitions and illnesses,
to blame it all on ambitions and details,
we have time to watch the clouds, advertisements or
some ordinary accident,
we have time to chase our wonders away
and to postpone the answers,
we have time to break a dream to pieces and then
to reinvent it,
we have time to make friends, lose them,
we have time to learn our lessons and then
forget them quickly afterwards,
we have time to be given gifts and not understand them.
We have time for them all.
But there is no time for just a drop of tenderness.
When we are about to get to that too – we die.
I have learned some things during my lifetime,
experiences that I am now sharing with you!!
I have learned that you cannot make somebody
love you;
All you can do is be the beloved one.
Everything else… depends on the others.
I have learned that, no matter how much I might care,
Others might not care at all.
I have learned that it could take years to earn somebody’s confidence
And only a few seconds to lose it.,
I have learned that it is not WHAT you have in life,
But WHO is there for you to have.
I have learned that charms could be of use for only
About 15 minutes,
Afterwards, nevertheless, you had better know something.
I have learned that you should never compare yourself
to what others can do better than you,
but you what you can do yourself;
I have learned that what happens to the others is not as import as
what I can do to help;
I have learned that in whatever you might cut things,
They will always turn out to have two sides;
I have learned that when you have to depart from your dearest ones,
you should do it with the warmest words;
It could be the last time you see them.
I have learned that you could carry on for a long time
After stating you cannot take it anylonger;
I have learned that heroes are those who do what is right,
when the ought to,
regardless of the consequences;
I have learned that there are people who love you
But do not know how to show it;
I have learned that when I am upset I have
the RIGHT to be so
But I do not have the right to be mean as well;
I have learned that true friendship continues
to exist even when great distances are involved
And that goes for true love too.
I have learned that, if somebody does not love you
the way you might want to be loved,
It does not mean they do not love you with all their heart.
I have learned that no matter how good a friend might be to you,
They will inevitably hurt you from time to time
And you will have to forgive;
I have learned that it is not always enough to be
forgiven by others,
Sometimes you must learn how to forgive
your own self;
I have learned that, regardless of how much you might suffer,
The world will never cease running because of your pain.
I have learned that the past and circumstances
could alter your
personality,
But it is certainly YOU to be held responsible for what you become;
I have learned that, if two people argue, it does not mean
they do not love each other,
As well as their not arguing would not prove that they subsequently
are in love.
I have learned that you should sometimes put the person
in the first place
And not their deeds;
I have learned that two persons could be watching the very same thing
And perceive two totally different meanings;
I have learned that, in spite of any consequences,
Those who are fair and honest with themselves
reach higher peaks in life;
I have learned that one’s life could be changed
in only a few hours’ time
By people who might have never even known them;
I have learned that when you believe there is
nothing more you could offer,
You will always find the strength to help a friend
who's in need.
I have learned that writing,
Just like speaking,
Could soothe your inner pain.
I have learned that the ones you hold dearest
Are taken away from you far too soon…
I have learned that it is far too difficult to realize
Where to draw the borders between kindness, not hurting the others
and firmly sustaining your ideas.
I have learned to love
In order to be loved in my turn."

My own homemade recipe of Chicken Fried & Curry Rice, Spicy Tomato Curry and Roti. Namaste!

I‘m in love with the indian culture, cooking style & all those many food ingredients that can enrich a simple day just by "magic".  
 And also, I can say that I'm so glad to cook in an "almost" indian style ... just the way I saw in movies or by watching different indian chef's video recipes. Actually -  it is beyond my imagination the expression "I can't do the recipe because..."
        I use only some of various condiments from their cuisine: curry powder, black pepper, thyme, bay leaves and cumin seeds… (or according to my taste and digestive possibility; too spicy it is known that it can harm to health (ex. digestive ulcer).
      But it is known that they use a lots of flavours to spice the cooked foods: "Depending on the recipe, additional ingredients such as ginger, garlic, asafoetida, fennel seed, caraway, cinnamon, clove, mustard seed, green cardamom, black cardamom, nutmeg, long pepper, and black pepper, etc may also be included."       So… I have a new perspective concerning the cooking rice and the mixture of  cooked vegetables, various, but most of all: tomatoes and red or green peppers. My favourite receipes includes: curry fried rice with various vegetables (mushrooms, carrots, corn beans or green peas), chicken curry rice and a variation of a spicy tomato curry / "tomato chutney" or spicy tomato sauce - if you like... (in roumanian: "sos de rosii cu ardei picanti).

Recently I also experimented a new element from the indian kitchen: Roti.

Roti or chapati - which is considered "An Indian Bread made with whole wheat flour traditionally known as 'atta' and most important an integral part of the Indian Cuisine and a day to day accompaniment to the main course in most Indian homes"...

Of course - I adapted the recipe at my own inspiration and tastes...


Below - I'll post the recipes of my homemade versions of
        Chicken Fried Rice, Roti and Spicy Tomato Curry.

     Ingredients for Chicken Fried Rice:

1. - 100 g. boneless chicken cut into thin strips or chicken wings cut into large sized chunks and fried in a hot pan;
2. - 2 carrots (chopped),  2 onions (very well sliced), 1 cup of green peas, 1 cup of corn beans that  must be cooked separate into a frying pan.
3. - Curry to taste (1 spoon - mixture of condiments as you like - to be sweet & hot & spicy);
It can be added: hot chilli pepper , black pepper, salt, thyme, bay leafe, cumin seeds.
4. -  4 tablespoons of oil;
5. - Cooked rice; 200 g. (1 full glass) the long rice.

Optionally: According with the original receipe you can use at the beginning of cooking: 2 garlic cloves - finely chopped and 2 eggs and lightly mix before to add the soaked rice followed by 1 tbsp of soy sauce and 1/2 tbsp vinegar.

My Method (Inspired from the Indian recipe):

       In a hot pan while you prepared the curry add the vegetables and let them for a couple of minutes to mix with spices! Then add the chicken & the rice and stir them together.
Then add salt, pepper to taste.



     Ingredients for Roti:

- 2 cups whole wheat flour;
- Salt to taste
- 1 tablespoon /Oil as required
- cca. 250-300 ml water.

Method (Inspired from the Indian recipe):
“Combine wheat flour, salt and 1 tablespoon oil in a parat. Mix well and knead into a soft dough using water, at intervals. Apply little oil on the dough, cover with a bowl and set aside to rest for 15-20 minutes.
Divide dough into equal portions shaped into balls. Roll out balls into large discs: These are rotis.
Heat a non stick tawa. Place a roti on it and cook for  2 minutes on medium heat. Flip and cook again on the other side for 2 minutes. Remove roti from the tawa, place on open fire and cook till it  puffs.
Serve hot. 
Enjoy!




How to make a Homemade Spicy Tomato Curry

This is a really fresh homemade sauce. You can adjust the amount of chilli to your taste, but I surely like it quite spicy!!

Ingredients 
- 400 g tinned or fresh tomatoes
- 150 g bell peppers 
- 3 tablespoons of  oil
- 1 tsp curry powder
- 1 tsp paprika or hot chilli
- 1 tsp powder of sweet bell peppers
- salt
- black pepper

Sometimes if it is necessary we will add more vegetables (carrots or onions for instance) and 1 tsp sugar or vinegar or other spices or sauces - if you like it …or according to taste!

My Method

Heat your pan and add some cooking oil, then the fresh tomatoes and bell peppers followed by the tinned tomatoes, curry powder, paprika, powder of sweet bell peppers, more vegetables, pepper & salt to taste.
Stir together and bring to the boil, then turn down the heat and leave to simmer for 20-25 minutes to cook and thicken.
            It can be served immediately with simple bread, roti or as a garnish to the rice, potatoes or various type of dishes as well...

             Ceramica tradiţională de Horezu este un meştesug artizanal unic şi executat manual în judeţul Vâlcea din România.

               În 6 decembrie 2012 - ceramica ş mestesugul / know-how-ul tradiţional al ceramicii de Horezu au fost introduse pe lista UNESCO ca  listă reprezentativă a patrimoniului cultural imaterial al umanităţii.
                  Obţinerea acestui statut devine astfel obligaţie de a proteja şi de a asigura transmiterea din generaţie în generaţie a acestui mesteşug tradiţional în aceeaşi manieră cunoscută până azi.


            Olarii – aleg şi extrag lutul care este curăţat, fragmentat şi apoi frământat, transformându-l într-o pastă din care se produc vasele de ceramică de culoare roşie.

           "Fiecare obiect este modelat cu o tehnică manuală specifică, ornat cu motive tradiţionale în culori vii şi apoi introdus într-un cuptor. Meşteşugarii olari folosesc instrumente tradiţionale precum malaxorul, diverşi piepteni, instrumente de pictat/decorat şi cuptorul de ardere al vaselor ceramice."
Trebuie subliniat că la Horezu - cocoşul este simbolul dominant reprezentat în pictura tradiţională a ceramicii, dar pot fi găsite sau întâlnite şi alte elemente sau simboluri ca: "stele, şerpi, arbori, siluete de oameni, flori, peşti, spirale duble, linii drepte, linii ondulate, frunze, centuri, soare, pomul vieţii, chiar şi coada de păun. In regiune sunt utilizate culori specifice: printre care roşul şi galbenul de Horezu."

Le savoir-faire de la céramique traditionnelle de Horezu

              La céramique traditionnelle de Horezu est connu comme un artisanat unique qui est fabriqué à la main dans le département de Vâlcea en Roumanie.
En 6 decembre 2012 - la ceramique et la savoir-faire de la ceramique traditionnelle de Horezu a ete introduit sur la liste de UNESCO, la liste representative du patrimoine culturel immateriel de l'humanite.


           
            Le statut obtenu devient une obligation de proteger ce savoire-faire et d'assurer la posibilite de transmision du generations en generations a la meme facon que on ete fait jusque aujourd'hui.
            Les potiers choisissent et extraient la glaise qui est ensuite nettoyée, coupée, pétrie et malaxée, la transformant en une pâte à partir de laquelle ils produisent une céramique rouge.
            "Chaque objet est modelé avec une technique de doigté particulière, orné de motifs traditionnels aux tons vifs, puis passé au four. Les potiers s'appuient sur l'outillage traditionnel: malaxeur, peignes, outils de décoration et four à bois."  


             
          Il faut dire que chez Horezu - le coq est le symbole dominant dans la peinture traditionnelle de la ceramique, mais on peut de retrouver des autres elements ou rencontrer d'autres figures comme: "des étoiles, des serpents, des arbres, des gens, des fleurs, des poissons, double spirale, ligne droite, ligne ondulée, feuille, ceinture, le soleil, l'oreille, arbre de la vie et de la queue de paon. Dans la région il y a deux couleurs spécifiques: rouge et jaune de Horezu. "
