A summer recipe: Fried Zucchini/ Dovlecei pane.
 Or "Hobak-Jeon or Korean Pan Fried Courgette".

In summer, almost everything is wonderful, except the high heat or humidity levels. In these circumstances, for today I've chosed for a very quick and simple homemade dish: fried courgette seasoned with garlic and black pepper.
Of course, this is a very known recipe in many ways of cooking or in worldwide cuisines.
Some interesting infos - that I could find them about - I have already shared in a previous post and posted two years ago.

Now, back to the presented topic, a lovely way to cook courgettes and so similar to the romanian recipe of "dovlecei pane", it is the recipe of "Hobakjeon" in the korean cooking style.
The dish is called Hobak-Jeon or Korean Pan Fried Courgette.

1. "A delicious and healthy Korean side dish, Hobak Jun (or Jeon)* is easy to prepare and goes well with almost every Korean meal. The zucchini is coated in a thin batter of flour and egg, sauteed on both sides, and served with soy sauce for dipping.

INGREDIENTS
1 medium-large zucchini, sliced into 1/4 inch coins
1/2 Cup Flour
2 eggs, beaten
2 tsp salt
1-2 Tbsp vegetable or olive oil (for saute pan).
"Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
PREPARATION

Distribute 1 tsp salt over zucchini slices.
Add remaining 1 tsp salt to beaten egg.
Put flour and egg in separate shallow dishes next to stove.
Heat lightly greased saute pan to medium heat.
Coat zucchini coins first with flour, and then dip and coat with beaten egg and place into pan.
Saute zucchini for about 3-4 minutes per side, turning once, or until they are a light golden brown.
You can serve with the basic or spicy dipping sauces or nothing at all.

2. Excerpts: "Hobakjeon* is a dish of pre-marinated summer squash that is coated with wheat flour and egg wash then pan-fried. It may also be fried with meat stuffing. In olden days, hobakjeon was fried with no coating or only wheat flour coating."

Recipe
"1. Coat the squash slices with wheat flour and beaten egg. 
2. Preheat the frying pan and oil, set the heat to medium and panfry the squash slices for 2 minutes When bottom side is well-done, turn over, garnish with the green/red pepper, fry for 1 minute.
3. Serve with vinegar soy sauce."

Tip
"Pay attention to control the heat. If the heat is too high, squash may be burnt, but too low, absorb oil too much."*

My own recipe for fried zucchini.

INGREDIENTS for Fried zucchini in my style.
 Dovlecei prăjiți în stilul meu:

- 1 medium or large zucchini in slices/ 1 dovlecel mediu; felii.
- 1 Cup Flour/ 1 Cupa Făină;
- 2 eggs, beaten/ 2 ouă, bătute;
- 1 tsp salt/ 1 lingurită de sare;
- Ground black pepper/ Piper negru;
- Garlic sauce/ Sos de usturoi;
- 1-2 Tbsp vegetable oil (for saute pan)/ 1-2 linguri de ulei vegetal (pentru prăjit).

Tip: Before to start to cook in the pan, put the peeled zucchini slices in a colander along with some salt and set aside for 1 hour to drain.

Then, (following the original recipe) coat zucchini slices first with flour and then dip and coat with beaten egg and place into pan.
Saute zucchini slices for about 3 to 4 minutes per side, turning once or until they are a lightly golden brown.
You can serve them with the basic or spicy dipping sauces or nothing at all, according to personal taste.

 To personalize the original recipe I've added a bit of garlic sauce and ground black pepper.

    1. Am descoperit modul de prepare, cam tarziu; sunt intr-adevar deliciosi!! -*-**-**incerc mereu sa imi imbunatatesc reteta, imi dau silinta. :) ;)din timp in timp, mai gasesc idei, ma inspir, de ici de 'colo; caut sa le pun in practica, deh, poate aflu ceva nou.

    1. Chiar asa ar trebui, Suzana! Si eu incerc sa-mi amintesc de aceste povete, ori de cate ori, timpurile/ vremurile par sa fie "pe acceleratie agitata ori stresanta" *-* lol chiar ne-ar folosi... :)
      Si ai dreptate, dovleceii sunt apetisanti si ii fac din cand in cand, asemenea; incerc, atunci, sa ii combin uneori, intr-un mix, cu sos de rosii cu marar sau de usturoi ...
      Multumesc de gandurile oferite si o saptamana armonioasa, cat mai minunata, asemenea!

    1. Daa, super...chiar exista clatite si in korean style. Am gasit info despre (nu am incercat) si se numesc hobak buchim (also called buchimgae) sau Zucchini Pancakes. Pe scurt clatite cu dovlecei rasi; mi-am propus sa incerc, candva. :)

    1. Gladly; you're welcome! indeed, it took me, quite some time to find a recipe on my taste, as well, and actually to enjoy summer zucchini... for instance I can't eat courgettes in stew or in another kind of preparation. Still vegetables are welcome in various, healthy foods!

  15. looks delicious.. I do mine without any coating at all though (like you say it used to be done in the old days --which figures because I am old myself ;>))) I add lots of sliced onions and salt and pepper. What your recipe says about the temperature of the oil is very true!.

  16. That is exactly how large zucchinis are cooked in Greece, Alexa. We often have this at home with zucchinis grown in our garden :-)
